Dairy-Free, Nut-Free Horchata

This dairy-free and nut-free, Mexican classic is so easy to make and is the perfect complement to a spicy meal!

  • 1 cup Long-grained rice

  • 2 Cinnamon sticks

  • 5 cups Water

  • 1 tsp Vanilla

  • 1/2 cup Sugar

  1. Combine 1 cup rice, 2 cinnamon sticks, and 5 cups of water in a blender. Blend until the ingredients are somewhat ground.

  2. Let this mixture sit and soak for at least 8 hours. The longer you let it soak, the better your horchata will be.

  3. When you're ready to drink, blend once more and strain the drink into a pitcher using a sieve to remove the rice and cinnamon pieces.

  4. Add 1 tsp vanilla and 1/2 cup sugar to the pitcher and stir until the mixture is combined.

  5. Serve over ice, sprinkle with cinnamon, and enjoy!
